The New Generation of Sake Brewers and Their Sake – A collaboration with Ueno

Join us on 9 October 2026 for a special Sake Masterclass at SHIKI Sakethek Vienna. Sake Samurai Yoshiko Ueno Müller will present a selection of carefully chosen sakes and share the personal stories of the brewers featured in the book SAKE – Myth. Craft. Pleasure.
As part of this exclusive tasting, our guests will enjoy five different premium sakes from the breweries featured. Each sake will be presented in detail – from the rice varieties used and polishing ratios to its aromas, style and ideal food pairings.
- SHICHIKEN – Sparkling Dry
An elegant bottle-fermented Sparkling Sake with fine bubbles, refreshing acidity and a creamy texture. Delicate aromas of green melon and pear lead to a clean, dry and subtly nutty finish. - TEDORIGAWA U. – Tedorigawa
A modern Yamahai Junmai with a light, silky texture and lively acidity. Fragrant notes of pear and pink grapefruit lead into a juicy, fresh and wonderfully balanced finish. - NIIDA – Shizenshu Kioke
Naturally brewed and traditionally fermented in wooden Kioke barrels using wild yeasts from the brewery. Complex and vibrant, with rice umami, fresh acidity, delicate citrus and lactic notes, and a subtle hint of wood. - MASUIZUMI – JDG Special
An elegant Junmai Daiginjo from Toyama, showcasing Masuizumi’s characteristic refined and precise style. Delicate fruit, subtle rice sweetness and fine acidity come together in a balanced and sophisticated sake. - DARUMA MASAMUNE 2023
A sake specially crafted for aging, gaining depth and complexity as it matures. While delicate and fresh in its youth, it develops over time into a rounder, fuller and more layered expression.
